I love breakfast! For me, it is the most satisfying and also most diverse meal of the day. You can have a fruit quicky with a self-made smoothie or a long brunch with all the delicious bits and bobs like scrambled eggs and avocado toasts. This all so yummy but my absolute favorite are pancakes!

Every time I have these fluffy delicacies I think myself back to my childhood when my mum used to make pancakes on the weekend and we talked for hours on the kitchen table. Sweet memories for tons of calories, because let’s face it, pancakes are real thickeners. Finally, I found a solution to this problem, so here are two super easy and quick to make healthy pancake recipes:

 

Pancakes without flour

 

You can easily replace flour with oats. White flour is not healthy at all and bad for your heart and blood sugar level. It also does not include any fibers, which are super important for your immune system. Oats, on the contrary, are full of nutrients and give your body lots of energy throughout the day, since it is full of long-chain carbohydrates.

 

What you need for 4 pancakes:

 

50 grams of Oats

1 tablespoon brown sugar

150 milliliter soy milk

2 eggs

½ teaspoon baking soda

½ banana

½ tablespoon coconut oil

a little bit mineral water

 

How to do it:

 

Mix the oats, the baking powder, eggs, soy milk and the mineral water into a homogenous dough. You can also add some fruits at this point if you like. Heat the coconut oil in a pan, but be careful, coconut oil burns easily. Form pancakes out of 3 tablespoons of dough and let them bake for about 3 minutes on each side until they are crispy and golden.

Pancakes with only two ingredients

 

Pancakes can be made out of nearly everything, so here is a super quick recipe for all the protein and banana lovers out there.

 

What you need for 3 pancakes:

 

2 eggs

1 very ripe banana

½ tablespoon coconut oil

 

How to do it:

Put the banana into a bowl and squish it with a fork until it is a slushy mass. Add the eggs and mix it with a blender for the extra portion fluffiness. Heat the coconut oil and bake the pancakes until you recognize small bubbles in the dough. Now turn the pancake around and bake it until it is golden.

 

To the pancakes, you can add some yogurt or fruits- preferably berry since they are super healthy and full of vitamins.
